Characterization of Goat Milk Fermented With Streptococcus thermophilus, Limosilactobacillus mucosae CNPC007 and Inulin With Addition of Cereus jamacaru

open access: yesApplied Research, Volume 5, Issue 3, June 2026.
Limosilactobacillus mucosae maintained viability above 7 log CFU/g during storage of the fermented goat milk with inulin and Cereus jamacaru jam and survived over 4 log CFU/g during the in vitro gastrointestinal simulation. This jam enriched the total phenolic content of the fermented milk that achieved overall acceptability scores close to or above 7.

Thermal Abuse and Age of Biomass as Critical Factors for the Viability of Functional Microorganisms in “Fiordilatte” Ice Cream

open access: yeseFood, Volume 7, Issue 3, June 2026.
Fiordilatte ice‐cream could be a valuable carrier for probiotic microorganisms; however, thawing cycles, in terms of number and duration of each events, along with the conditions of probiotic production (namely the age of cells at the time of inoculation), could strongly affect functional properties.

Edulitin 2, a Ribotoxin‐Like Protein From Boletus edulis That Triggers Apoptosis in Colon Cancer Cells While Preserving the Integrity of the Intestinal Microbiota

open access: yeseFood, Volume 7, Issue 3, June 2026.
Edulitin 2 is a ribotoxin‐like protein exhibiting a potent antiproliferative activity towards Caco‐2 and HT29 cells by programmed cell death. However, edulitin 2 does not affect gut microbiota growth, despite damaging fungal ribosomes. ABSTRACT Porcini (Boletus edulis Bull.) are a reservoir of pharmacological biomolecules with health‐promoting ...
