Physicochemical Properties of Soy Protein: Effects of Subunit Composition
Journal of Agricultural and Food Chemistry, 2011Soy protein elastomer (SPE) exhibits elastic, extensible, and sticky properties in its native state and displays great potential as an alternative to wheat gluten. The objective of this study was to better understand the roles of soy protein subunits (polypeptides) contributing to the functional properties of SPE. Six soy protein samples with different

Composition, structure, physicochemical properties, and modifications of cassava starch
Carbohydrate Polymers, 2015Cassava is highly tolerant to harsh climatic conditions and has great productivity on marginal lands. The supply of cassava starch, the major component of the root, is thus sustainable and cheap. This review summarizes the current knowledge of the composition, physical and chemical structures, physicochemical properties, nutritional quality, and ...

Physicochemical causes for the microstructure of melt-textured composites
Superconductor Science and Technology, 1997We report semiquantitative results for a physicochemical model intended to describe the multigrain growth of (123/211) composites under isothermal undercooling. This model takes into account various ingredients supposed to be controlling the growth of such superconducting compounds, i.e. the presence of secondary phases.

Study of the Composition and Physicochemical Properties of Diamond Hydrogels
Colloid Journal, 2004Six fractions of ultradispersed diamonds with different aggregate sizes are separated from a hydrogel stable with respect to sedimentation by the step-by-step ultracentrifugation. Distribution of carbon phases and impurities between the fractions is studied, and the fraction densities are calculated and experimentally determined.
