パイナップル茎部中のフェルラ酸,ρ-クマル酸およびρ-ヒドロキシ安息香酸含量はそれぞれ8.5,15.3および8mg/g(乾重量)であった.パイナップル茎部にSporotrichum sp. HG-1起源酵素を作用させると,フェルロイルオリゴ糖エステル(FE)の遊離が認められた.本菌株の産生するカルボキシメチルセルラーゼ(CMCase)とキシラナーゼ間にはFEの生成において相乗作用が認められた.エステル態のフェルラ酸は遊離態フェルラ酸よりも大腸菌に対して強い抗菌作用を示した.FEはグラム陽性菌,グラム陰性菌および放線菌に対して強い抗菌活性を示したが,Lactobacillus属,Streptococcus属やEntrococcus属に対しては抗菌活性を示さなかった.
