Antioxidant activities of edible plants.

107種, 117部位の山菜,野菜,香辛菜のエタノール抽出物の抗酸化能スクリーニングを行ったところ,約半数のものに何らかの抗酸化能の存在が示唆され, 26種に特に強い抗酸化効果が認められた.そのうち14種を選びそのエーテル,エタノール,水抽出物について,リノール酸を基質としてエマルジョン系で更に詳細にその抗酸化能を検討した,個々の試料の活性成分の溶媒に対する抽出性には異なった挙動がみられた.又,この抗酸化能の原因は明らかではないが,抗酸化能を有する植物のトコフェロール類をHPLCにより定量したところ,大部分の植物でトコフェロール量と活性には相関は認められず,トコフェロール以外の多様な成分の存在が認められた.
