Food‐Safe Bioimpedance Monitoring of Table Grapes and Their Post‐Harvest Aging

A food‐safe, scalable electrochemical impedance spectroscopy system is introduced for real‐time monitoring of fruit aging and senescence. Edible electrodes are used, alongside an automatized food‐grade probing platform, to enable non‐destructive bioimpedance sensing of table grapes.
