It may also be listed as a “species likely to cause damage” (ESOD – the acronym in French), for public health reasons among others. Mercury has the ability to convert to methylmercury, a bioaccumulative neurotoxin. Exposure occurs in humans through the ingestion of contaminated food and it is associated with adverse health effects.

Exploratory survey on energy costs and their potential impact on food safety
