Survey of baked goods for propionic acid and propionates
Food Additives and Contaminants, 1996One hundred and thirty samples comprising bread (64), hamburger buns (33), pittas (16), cakes (9) and Christmas puddings (8) from various retail outlets in the UK, have been analysed for the preservative propionic acid. Only one sample of bread, two samples of hamburger buns and three samples of pitta contained propionic acid in excess of 1000 mg/kg ...

During the past years, there has been a growing interest in the bioproduction of propionic acid by Propionibacterium. One of the major limitations of the existing models lies in their low productivity yield. Hence, many strategies have been proposed in order to circumvent this obstacle.

Antimutagenicity of propionic acid bacteria
Mutation Research - Fundamental and Molecular Mechanisms of Mutagenesis, 1991The antimutagenicity of the cell extracts of Propionibacterium shermanii VKM-103, P. pentosaceum CCM 1859 and P. acnes CCM 3322 against mutagenicity of sodium azide and N-methyl-N'-nitro-N-nitrosoguanidine was demonstrated for the first time. The extracts of propionic acid cocci didn't show such effect.

THE PROPIONIC-ACID BACTERIA–A REVIEW
Journal of Milk and Food Technology, 1972This paper, the second of three sections of a review, deals with propionate and acetate formation, carboxylation, decarboxyiation, and transcarboxylation, the roles of biotin and vitamin B12, and the enzymes involved in the propionic-acid fermentation.

The Propionic Acids: A Personal Perspective
The Journal of Clinical Pharmacology, 1992In searching during the early 1950s for new drugs for the treatment of rheumatoid arthritis, little information was available to allow a rational approach. The mode of action of the few drugs available was unknown and even the analgesic action of aspirin could not be demonstrated in animals.
