山梨県産小ウメ果実を用いて, 梅酒I (青梅使用), 梅酒II (成熟果実使用) および梅酒III (過熟果実使用) の3種類の梅酒を調製し, 市販梅酒とともにフレーバー成分の分析と官能検査を行い, 以下のような結果を得た.1. 梅酒の香気寄与成分についてGC/OによるにおいかぎとAEDA法により, ethyl 2-methylbutanoate, benzaldehyde, phenylacetaldehyde, vanillin, γ-decalactone, δ-decalactoneがすべての梅酒においてFDファクターが高く, 梅酒の香気寄与成分であると考察した.
