和歌山県産の南高梅について, 過熟梅果実から塩漬け, 脱塩・調味液加工する際の各種ミネラル含量等の変化について検討した. 塩漬け加工の際, カルシウムとマグネシウムは増加又はほぼ同じ量となり, カリウムは減少した. 微量元素のうち鉄は塩漬け加工によって著しく増加した. また, 塩のミネラル組成が塩漬け梅のミネラル組成に大きく影響することが認められた. 脱塩・調味液加工により, 可食部分におけるナトリウム濃度は減少したが, カルシウム, マグネシウム含量に大きな変化は認められなかった. またカリウムは減少したがかなりの部分残存しており, 減塩処理してもアルカリ食品としての機能が保持されているものと考えられた.
