Foram elaboradas duas formulacoes de doce em massa de araca vermelho, a partir da polpa fresca e a partir do bagaco proveniente de extracao mecânica do suco de araca na concentracao de 1:1 (m/m) de materia prima e sacarose, sem adicao de pectinas. Os doces foram caracterizados atraves de analises fisico-quimica e reologicas.
