The Gastronomic Identity Shift: Applying the Modified Health Belief Model and Behavioral Intention Among International Students' Food Adaptation in South Korea

open access: yesInternational Journal of Tourism Research, Volume 28, Issue 2, March/April 2026.
ABSTRACT South Korea, a leading destination for international students, welcomed 208,962 students in 2024. Despite its academic opportunities, many face challenges in adapting due to shifts in gastronomic identity, unfamiliar ingredients, and cultural perceptions of food.

Non‐Invasive, High‐Resolution (1H2O) Metabolic Activity Diffusion Imaging [MADI] of Rat Glioma

open access: yesNMR in Biomedicine, Volume 39, Issue 3, March 2026.
We employed Metabolic Activity Diffusion Imaging [MADI] and 18FDG‐PET in rats with syngeneic RG2 glioblastoma brain tumors. MADI quantifies kio (the cellular H2O efflux rate constant), cell volume (V), and cell density (ρ), without the use of contrast agents. The kioV product quantifies the rate of water efflux per cell.

Post‐translational regulation of human D‐3‐phosphoglycerate dehydrogenase in Alzheimer's disease

open access: yesProtein Science, Volume 35, Issue 3, March 2026.
Abstract Emerging evidence suggests that sex‐specific differences in L‐serine (L‐Ser) metabolism play a key role in Alzheimer's disease (AD). While disruptions in amino acid balance are well known, recent findings point to a dimorphic regulation of the serine biosynthetic pathway.

Profiling and Characterization of Seed Storage Proteins From Borage (Borago officinalis L.) Pressed Cake as a Novel Plant‐Based Protein Source

open access: yesSustainable Food Proteins, Volume 4, Issue 1, March 2026.
Borage (Borago officinalis L.) pressed cake, a by‐product of oil extraction, was profiled and characterized to evaluate its potential as a sustainable, plant‐based protein source. Protein fractionation revealed glutelin‐like proteins as predominant, accompanied by 2S albumin, 7S, and 11S globulin‐type proteins. Proteins exhibited high thermal stability
