Characterization of the Human Risk of Salmonellosis Related to Consumption of Pork Products in Different E.U. Countries Based on a QMRA [PDF]

open access: yes, 2020
In response to the European Food Safety Authority's wish to assess the reduction of human cases of salmonellosis by implementing control measures at different points in the farm-to-consumption chain for pork products, a quantitative microbiological risk ...

Quantitative microbial risk assessment (QMRA) of the work of manual pit emptiers, commonly known as bayakous

open access: yesWater Science and Technology
In Haiti, manual pit emptiers, known as bayakous, face significant health risks. They work by descending naked into latrine pits, exposing themselves to pathogens and contributing to environmental contamination.

A Risk‐Based Framework for Ranking Microbiological Hazards and Identifying Mitigation Strategies for Dried Fruits, Vegetables, Herbs, and Spices Used in Ready‐to‐Eat Foods

open access: yesComprehensive Reviews in Food Science and Food Safety, Volume 25, Issue 5, September 2026.
ABSTRACT Low water activity ingredients, including dried fruits, vegetables, herbs, and spices, are widely used in ready‐to‐eat (RTE) and non‐RTE foods. Although low water activity limits microbial growth, bacterial pathogens can survive for extended periods in these products.

The Wells–Riley Model Revisited II: Parameter Uncertainty and Population Heterogeneity

open access: yesRisk Analysis, Volume 46, Issue 8, August 2026.
ABSTRACT In this work, we revisit the Wells–Riley model, which has been widely used to estimate airborne infection risk in indoor settings. In particular, we consider a probabilistic (i.e., “stochastic”) framework of the Wells–Riley model which allows one to quantify infection risk in terms of the per‐capita probability of infection for each ...

Some aspects of deep-bed filtration dynamics in QMRA for drinking water

open access: yesWater Research, 2020
Unlike most unit processes in drinking water treatment, the performance of deep-bed filtration processes vary systematically on short time-scales; the particle removal capacity changes with time since the previous backwash, even when the influent water quality is stable. For microorganisms, the removal efficiency may vary by orders of magnitude.

Poultry Food Assess Risk Model for Salmonella and Chicken Gizzards: III. Dose Consumed Step

open access: yesJournal of Food Protection
The Dose Consumed step of the Poultry Food Assess Risk Model (PFARM) for Salmonella and chicken gizzards was presented and compared to the Exposure Assessment step of Quantitative Microbial Risk Assessment (QMRA).

Toward Robust ARB Inactivation in Wastewater: Comparing Performic Acid, Peracetic Acid, and Chloramination Using ICT, Resistance, and Reactivation Metrics

open access: yesWater Environment Research, Volume 98, Issue 7, July 2026.
Performic acid (PFA) achieved rapid, linear, and consistent inactivation of enterococci and vancomycin‐resistant enterococci, peracetic acid (PAA) exhibited slower, variable kinetics with distinctive shouldering, and sodium hypochlorite proved the least reliable and displayed a “lower dose advantage.” These findings position PFA as a promising ...

Integrating Whole-Genome Sequencing Data Into Quantitative Risk Assessment of Foodborne Antimicrobial Resistance: A Review of Opportunities and Challenges

open access: yesFrontiers in Microbiology, 2019
Whole-genome sequencing (WGS) will soon replace traditional phenotypic methods for routine testing of foodborne antimicrobial resistance (AMR). WGS is expected to improve AMR surveillance by providing a greater understanding of the transmission of ...

Quantitative risk assessment of haemolytic uremic syndrome associated with beef consumption in Argentina.

open access: yesPLoS ONE, 2020
We developed a quantitative microbiological risk assessment (QMRA) of haemolytic uremic syndrome (HUS) associated with Shiga toxin-producing Escherichia coli (STEC)-contaminated beef (intact beef cuts, ground beef and commercial hamburgers) in children ...

Microbial Safety of Legumes—A Review: Bacterial Contamination, Foodborne Outbreaks, and Traditional and Innovative Mitigation Strategies

open access: yesLegume Science, Volume 8, Issue 2, June 2026.
ABSTRACT Demand for plant‐based foods, including legumes, is growing as a result of consumer preferences shifting toward food sustainability and plant‐based, protein‐rich foods. However, to ensure the food safety of such alternatives, assessing the prevalence of foodborne pathogens related to these products is critical, especially with their increasing
