リシノール酸およびそれを酸化して得られる12-ケトオレイン酸のサッカロースモノエステルを合成して,その界面活性剤としての諸性状を明らかにするとともに,既に報告があるサッカロースモノステアレートおよびオレエートと,同一条件下における比較検討を行って,脂肪酸基の構造の差異によるその界面活性能の相違について研究を行った結果,(1)これら4種のエステルの表面張力,界面張力は各濃度においてほぼ同じであり,大きい差異はない。(2)浸透性は1%以下の濃度にあっては12-ケトオレエートが,1%にあってはリシノレートが大で,脂肪酸部に親水基を持つものが良好であり,ステアレート,オレエートと大きい差異を生じた。(3)起泡性は12-ケトオレエート>リシノレート>オレエート>ステアレートの順となり,特にステアレートは小さく,
