Genetic and epidemiological studies have together identified hundreds of risk factors for MS, but we know relatively little about the mechanisms through which these cause disease. In the subhumid, wetland‐rich, geologically heterogeneous Boreal Plains region of Canada, we found several controls on stream DOC concentration ([DOC]) and DOM composition: An increase in [DOC] and aromaticity as temperature increases throughout the summer, with temperature trend prevailing over the influence of discharge.

Abstract BACKGROUND Carotenoids are plant‐derived antioxidants that contribute to human health and represent key quality traits in wheat‐based foods. However, they are highly unstable and prone to degradation during processing.
