In this paper, key aspects of lipid metabolism and characteristics of ruminants’ meat and milk fat were reviewed. Fatty acids available for absorption in the small intestine of ruminants are from dietary and microbial origin and, because of microbial digestion in the rumen, are mainly nonsterified saturated fatty acids.
