Microencapsulation of Saccharomyces boulardii in Prebiotic‐Enriched Matrices: A Strategy for Probiotic Viability Enhancement Using Sugarcane Juice

Spray drying Saccharomyces boulardii with sugarcane juice, inulin and maltodextrin produced microcapsules with enhanced viability, reduced moisture loss, and enhanced thermal stability. This synergistic matrix offers a promising strategy for developing stable and functional probiotic delivery systems.
