Exploring the Prevention of Lipid Deposition Caused by High‐Fat Diet and Its Mechanism of Action of Rosa roxburghii Fermented Juice Based on Liver Metabolomics and Gut Microbiota

open access: yesFood Science &Nutrition, Volume 13, Issue 8, August 2025.
Rosa roxburghii fermented juice can improve dyslipidaemia by modulating gut microbiota disorders. Rosa roxburghii fermented juice may regulate lipid deposition by increasing metabolites such as choline, L‐Tyrosine, and L‐Phenylalanine in the liver to improve liver metabolic profile.

Antioxidative Effects of Defatted Rice Bran in Rats on AOM/DSS‐Induced Colon Oxidative Stress and Correlations Between Gut Microbiota and Antioxidant Biomarkers

open access: yesFood Science &Nutrition, Volume 13, Issue 8, August 2025.
Defatted rice bran (DRB), a by‐product of Thai rice oil extraction, demonstrated significant antioxidant and prebiotic properties in AOM/DSS‐induced colorectal cancer models. DRB supplementation reduced oxidative stress markers, enhanced antioxidant enzymes, and favorably modulated gut microbiota, particularly increasing Akkermansia, Lactobacillus and ...

Anti‐Inflammatory Effect of Goat Milk Against Acetic Acid‐Induced Ulcerative Colitis in Rat Model

open access: yesFood Science &Nutrition, Volume 13, Issue 8, August 2025.
Goat milk was evaluated for its anti‐inflammatory potential. Ulcerative colitis was induced using acetic acid in a rat model. Goat milk significantly reduced colonic inflammation and ulceration. Histological analysis showed marked mucosal healing. Results suggest goat milk as a potential therapeutic in colitis management.

Moderate Beer Consumption Ameliorated Aging‐Related Metabolic Disorders Induced by D‐Galactose in Mice via Modulating Gut Microbiota Dysbiosis

open access: yesFood Science &Nutrition, Volume 13, Issue 8, August 2025.
The present study conducted a comparative analysis of the effects of moderate consumption of three prevalent beer types—Original beer, India Pale Ale (IPA), and Stout—on D‐galactose‐induced aging in mice. The findings demonstrate that the tested beers exhibit potential in mitigating metabolic disorders encompassing oxidative stress, inflammation levels,

Epigenetic Modulation and Brain Function in Parkinson's Disease: The Role of Exercise Alone or Combined With Polyphenols

open access: yesFood Science &Nutrition, Volume 13, Issue 8, August 2025.
Similarly, polyphenols affect epigenetic marks and reduce oxidative stress and inflammation, both key drivers of PD pathology. Therefore, in this review, we explore how these interventions, individually and in combination, influence epigenetic mechanisms relevant to PD.
