A Model‐Based Interpretation for the Apparently Homogeneous Steam Bubble Nucleation in Industrial Evaporative Sucrose Crystallization

A model has been developed and validated with data from the sugar industry to determine the evaporation rate of discontinuous evaporating crystallizers. The results indicate that vapor nucleation on the surface of sucrose crystals is a significant factor, particularly in the context of low temperature differences in the calandria.
