Canadian Journal of Research, 1948Reducing sugar determinations have been proposed as an over-all measure of both bacteriological and chemical changes in frozen egg. When applied to commercial products, the technique recommended has been found to yield poorly reproducible results, while reducing sugar readings show no correlation with viable or microscopic counts of bacteria.
