The esterase and depsidase activities of tannase [PDF]
The esterase and depsidase activities of tannase have been examined by kinetic methods. Although the esterase/depsidase ratio of tannase may be varied by cultural methods and isolation procedures, evidence has been obtained to show that tannase, esterase and depsidase are enzymes with low specificities capable of hydrolysing both esters and depsides of

Fractionation and Characterization of Tannin Acyl Hydrolase from Aspergillus niger
We previously produced tannin acyl hydrolase (tannase) from Aspergillus niger isolated from cacao pod. In the present study the enzyme was subjected to fractionation by ammonium sulphate followed by dialysis process.

Lactobacillus AS PRODUCERS OF EXTRACELLULAR TANNASE [PDF]
The aim of the work was to find strains of lactic acid bacteria capable to synthesize extracellular tannase enzyme − the key enzymehe hydrolyzing tannins which are plant food constituent. One of the main product of tannins hydrolyzis is gallic acid- the compound with proven antioxidant and onco-protective properties.

Feeding with tannin‐rich diets altered the fecal microbial composition and increased the relative abundance of tannin‐degrading microbes. We hypothesize that fecal bacteria and fungi may play important roles in helping herbivores adapt to tannin‐rich diets but respond to different tannin concentrations varies.

Abstract BACKGROUND Phenolic extracts are recognized for their health‐promoting properties, although some physicochemical characteristics limit their food applications. The present study aimed to valorize orange juice by‐products through enzymatic and hydroalcoholic extraction to obtain flavonoid ingredients and to evaluate their application in pectin ...

Tannase (EC 3.1.1.20) is an enzyme that hydrolyzes the ester and depside bonds of tannic acid to gallic acid and glucose. In the production of foods and beverages, it contributes to the removal of the undesirable effects of tannins. The aim of this study
