Functional diabetic biscuits enriched with cereal fibers, black plum (jamun) and bioactive spices

Food Biomacromolecules, EarlyView.
Cereal fibres, black plum (jamun) seed powder and bioactive spices can be combined with controlled mixing, hydration and baking to design functional biscuits. Fibre‐rich structures may limit starch accessibility, while polyphenols may inhibit starch‐digesting enzymes.

Pumpkin and chia seeds as functional foods and their application in different food products: A review

Food Biomacromolecules, EarlyView.
Abstract Functional foods have gained increasing attention for their capacity to promote health and reduce chronic‐disease risk beyond basic nutrition. Among plant‐based functional ingredients, pumpkin (Cucurbita spp.) and chia (Salvia hispanica L.) seeds are nutrient‐dense sources of proteins, unsaturated fatty acids, dietary fiber, tocopherols ...

Structural, physicochemical, and techno‐functional properties of ultrasound‐treated chickpea starch

Food Biomacromolecules, EarlyView.
Abstract This study investigated the effects of ultrasonication duration (10, 20, 30, and 40 min) on the physicochemical, functional, structural, thermal, and rheological properties of chickpea starch. Ultrasonication significantly enhanced water absorption capacity (WAC) and oil absorption capacity (OAC), with maximum values observed for U40 (2.13 g/g

Chitosan oligosaccharides treatment preserves quality, increases disease resistance, and extends the shelf life of bananas during storage

Food Biomacromolecules, EarlyView.
Chitosan oligosaccharides postharvest treatment effectively preserved quality, enhanced disease resistance, and increased shelf life of fruit. Abstract Different concentrations of chitosan oligosaccharide (COS) (T0: Control, T1: 50 mg/L, T2: 100 mg/L, T3: 250 mg/L, T4: 500 mg/L, and T5: 1000 mg/L COS) were used to investigate the effects of this ...

Controlling Growth of Ultrasmall Sub‐10 nm Silver Nanoparticles From Cotinus coggygria Scop. Extract and Evaluation of Its In Vitro Anti‐Breast Cancer, Antioxidant and Antimicrobial Activity

Journal of Applied Toxicology, EarlyView.
ABSTRACT This study highlights the potential use of Cotinus coggygria Scop. plant extract in a single‐step synthesis of biocompatible and ultrasmall AgNPs for in vitro applications. Herein, microscopic analyses revealed that AgNP exposure did not induce appreciable morphological changes in CRL‐4010 cells, whereas MCF‐7 and MDA‐MB‐231 cells exhibited ...

Effects of mixed microbial fermentation on the quality and metabolite profile of cassava leaf feed based on untargeted metabolomics

JSFA reports, EarlyView.
Abstract Background Cassava leaves are a major byproduct of cassava processing and have a low utilization rate. In this study, Lactiplantibacillus plantarum, Saccharomyces cerevisiae, and Bacillus subtilis were used for solid‐state fermentation of cassava leaves to improve their feed quality. Results After 48 h of fermentation, the feed pH decreased to
