Damson plum phenolic extract was encapsulated in soy lecithin‐based liposomes, followed by freeze‐drying and incorporation into milk. The liposomal delivery system improved the retention and recovery of key phenolic compounds, including neochlorogenic acid, rosmarinic acid, and rutin, during 28 days of refrigerated storage at 4°C, demonstrating a ...

Development of a Dairy Product Enriched With Oleaster Flour: A Novel Gluten‐Free Functional Pudding
Oleaster peel and flesh flour have been found to be potential ingredients for puddings. Oleaster flour enrichment led to an improvement in pudding properties, adding value to the final product. ABSTRACT This study aimed to characterize the physicochemical, textural, microbiological, bioactive, and sensory properties of milk‐based puddings enriched with

An analytical framework was developed for molecular weight analysis of fish‐derived collagen peptides in beverages. Three GPC methods were compared, and matrix interference from excipients was excluded using a 20.5 min cutoff. Cubic polynomial fitting significantly improved inter‐method consistency.

Abstract Background Bananas (Musa species) are an important staple food and cash crop in many parts of the world. The East African Highland cooking bananas form the backbone of food security for millions of Ugandans. The demand for high quality cooking bananas is thus closely linked to their sensory characteristics (which drive consumer preference) and

Abstract BACKGROUND Climate change is currently affecting chemical grape composition and, consequently, grape quality. The foliar application of biostimulants has emerged as a promising approach to mitigate these effects. This study investigated the effects of foliar applications of calcium (Ca), methyl jasmonate (MeJ), and their combination (Ca + MeJ)

Unlock the Potential of Pichia in Coffee: Knowledge Transfer From Fermented Beverages
ABSTRACT Considerable research has focused on non‐Saccharomyces yeasts to explore their biochemical potential and genetic diversity beyond the capabilities of the conventional starter culture, Saccharomyces cerevisiae. Among these, species of the genus Pichia have emerged as promising candidates in diverse food fermentation systems. Although studies on
