Food Chemistry, 1989Abstract Some important properties of Brussels sprouts thioglucosidase have been studied using ammonium sulphate precipitates. The enzyme activity followed Michaelis-Menten kinetics with sinigrin as substrate. Ascorbic acid was shown both to activate and to inhibit the thioglucosidase with an optimum activity at 10 − 2 M ascorbate.

Abstract A β-thioglucosidase capable of hydrolyzing mustard oil glucosides is of rare occurrence in fungi. Aspergillus sydowi QM 31c is a good source of the enzyme. The fungal enzyme resembles mustard seed myrosinase. Both enzymes degrade sinigrin producing glucose, KHSO4, and allyl isothiocyanate.
