Fermentation‐Assisted Valorization: A Sustainable Strategy for Turning Fruit By‐Products Into Value‐Added Food Supplements

open access: yesFood Frontiers, Volume 7, Issue 1, January 2026.
ABSTRACT A substantial proportion of fresh fruit undergoes processing, resulting in underutilized fruit by‑products (FBPs) that are rich in dietary fiber and bioactive compounds. Recent FBP valorization trends demonstrate that fermentation significantly enhances microbiological, nutritional, and sensory attributes, yielding value‑added food supplements.

Pharmacological Inhibition of EZH2 by GSK‐343 Attenuates Neuroinflammation in a Mouse Model of Spinal Cord Injury

open access: yesJournal of Neuroscience Research, Volume 104, Issue 1, January 2026.
In a mouse model of spinal cord injury, pharmacological inhibition of EZH2 with GSK‐343 reduces tissue damage and neuronal demyelination. GSK‐343 suppresses the EZH2/TRAF6/NF‐κB signaling pathway, leading to attenuation of neuroinflammation and innate immune activation. These effects promote early neuroprotection and improved locomotor recovery in vivo.
