Leaf photosynthesis and tuber crop productivity in topinambour plants
Russian Journal of Plant Physiology, 2015High-precision IR gasometry and pulse-amplitude modulated fluorometry were used under field conditions to study photosynthetic CO2 exchange, transpiration (H2O release), and the light stage of photosynthesis in intact fully expanded leaves of 15 varieties of topinambour (Helianthus tuberosus L.).

Phytochemistry, 1978Abstract An extract from Jerusalem artichoke shoots exhibited important adeninephosphoribosyltransferase activity. Only partial purification was possible because of the great instability of the enzyme. Phosphate ions and thiol reducing substances were necessary to stabilize it. The optimal temperature and pH were 40–45° and 5.5 to 6.5.

Valorisation des tubercules de topinambour par hydrolyse enzymatique
Journal of Food Engineering, 1994Abstract In the present work the enhancement of Jerusalem artichoke tubercules was studied. These are rich in polysaccharides: cellulose, hemicellulose, pectin and polyfructosane. The combined action of cellulase, cellobiase and inulinase led to a product containing 12–15% of sugars, where 80% was fructose and 20% glucose.

Zeitschrift für Pflanzenphysiologie, 1981Summary Extracts from Jerusalem artichoke shoots exhibited hypoxanthine-guaninephosphoribosyltransferase activity. Only partial purification by DEAE-Sephacel chromatography was performed considering the instability of the enzyme. The HGPR Transferase showed an absolute requirement for divalent cations: the greatest activity was found with Mn++.
