Abstract Background Hydroxytyrosol (HT) is a bioactive compound present in a limited number of foods such as wines, olives, and olive oils. During alcoholic fermentation, yeast converts aromatic amino acids into higher alcohols such as tyrosol, which can undergo hydroxylation into HT.

Human intraepithelial lymphocytes have no expression of the IL‐15 receptor on the duodenum, as opposed to the stomach, ileum and colon. Besides, and within the duodenum, no expression was found either on patients with coeliac disease, either at diagnose or following mucosal recovery after a gluten‐free diet.
