ABSTRACT The damage on the lipid fraction of whole jack mackerel (Trachurus symmetricus murphyi, Carangidae) during 120 days of frozen storage was studied. The chemical composition was determined through proximate analysis. Lipid quality deterioration was evaluated by measuring free fatty acids, peroxide values, conjugated dienes and p‐anisidine values.

The purpose of this study was to ascertain the validity of agedeterminations using otoliths of jack mackerel. The study consisted of two parts: (1)otoliths were examined for seasonal changes in the hyaline and opaque zones at the edges of otoliths and (2)a dominant year class was followed through consecutive years noting marginal zone changes.
