Vitamin A and the provitamin A carotenoids
1998In 1915 McCollum and Davis isolated from animal fats and fish oils a ‘fat-soluble A’ that was essential to rats for growth and also cured eye disorders. In 1921 Bloch reported that a diet containing full milk and cod-liver oil cured xerophthalmia in infants and concluded that the eye affliction was due to the absence of the fat-soluble A in the diet ...

Effect of solar drying on vitamin D3 and provitamin D3 contents in fish meat
Journal of Agricultural and Food Chemistry, 1988La vitamine D3 (chlolecalciferol) apparait instable a la lumiere solaire, contrairement a la provitamine D3 (dehydro-7-cholesterol). Ceci suggere que la vitamine D3 dans le poisson n'est pas formee sous l'influence de l'exposition au ...

Nutritional equivalents for folate, vitamin E and provitamin A carotenoids have been revised to more accurately reflect their contribution to nutrition as they exist in foods. This revision results in a reduction in the nutritional value of each of these three nutrients compared to previous nutritional equivalents.

Thermal degradation kinetics of carotenoids, vitamin C and provitamin A in tree tomato juice
International Journal of Food Science & Technology, 2019SummaryIn this research, the influence of temperature on the degradation of carotenoids, vitamin C and provitamin A in tree tomato juice was studied at 70, 80 and 90 °C. The thermal processing significantly reduced (P < 0.001) the concentration of the bioactive compounds, and the thermal degradation in the evaluated phytochemicals fit a kinetic ...

ABSTRACT Blanching of mung bean sprouts has little effect on total carotenoids and β‐carotene. Canned sprouts stored at RT for 6 months lost smaller amounts of total and ‘active’ carotenoids compared with bottled sprouts. Blanching resulted in approximately 50% loss of vitamin C in fresh mung bean sprouts but storage temperatures ...

Seasonal Variation of Provitamin D2 and Vitamin D2 in Perennial Ryegrass (Lolium perenne L.)
Journal of Agricultural and Food Chemistry, 2011Ergosterol (provitamin D(2)) is converted to vitamin D(2) in grass by exposure to UV light. Six varieties of perennial ryegrass (Lolium perenne L.) were harvested four times during the season, and the contents of vitamin D(2) and ergosterol were analyzed by a sensitive and selective liquid chromatography tandem mass spectrometry method. Weather factors
