Fungal Population of Nutmeg (Myristica fragrans) Kernels Affected by Water Activity During Storage
The aim of this investigation was to determine the effect of various water activities (aw) on fungal population in nutmeg kernels during storage. The seed nutmegs were obtained from ripe fruits one week after they fell on the ground in North Minahasa ...

Structural insights into an engineered feruloyl esterase with improved MHET degrading properties
A feruloyl esterase was engineered to mimic key features of MHETase, enhancing the degradation of PET oligomers. Structural and computational analysis reveal how a point mutation stabilizes the active site and reshapes the binding cleft, expading substrate scope.

Ultrasound increases the aqueous extraction of phenolic compounds with high antioxidant activity from olive pomace [PDF]
Olive pomace is a waste produced by the olive oil industry in massive quantities each year. Disposal of olive pomace is difficult due to high concentrations of phenolic compounds, which is an environmental concern.

This study reveals a unique active site enriched in methionine residues and demonstrates that these residues play a critical role by stabilizing carbocation intermediates through novel sulfur–cation interactions. Structure‐guided mutagenesis further revealed variants with significantly altered product profiles, enhancing pseudopterosin formation. These

An isoform of 14‐3‐3 protein regulates transbilayer lipid movement at the plasma membrane
Loss of 14‐3‐3ζ in CHO cells confers resistance to exogenous phosphatidylserine (PS) and impairs endocytosis‐independent inward flip‐flop of fluorescent PS at the plasma membrane. RNAi‐mediated knockdown reproduces this defect, while no additive effect is seen in ATP11C‐deficient cells.

Study on factors (pH, water activity, salt content) affecting the growth of Listeria Monocytogenes in raw dried cured sausages [PDF]
Commission Regulation (EC) 2073:2005 considers the factors which can support or inhibit the growth of Listeria monocytogenesin ready-to-eat foods. The aim of the experiments was to examine the values of pH, water activity (aw), salt content and level of

Which Gets Hotter, Land or Water? [PDF]
This activity illustrates how dark land surfaces, light land surfaces and water all heat at different rates. Students determine whether land or water absorbs heat more quickly and how this difference affects weather and climate.

Phase separation phenomena during the formation of asymmetric membranes [PDF]
The formation of membranes from two systems has been studied. In the system polyurethane-dimethylformamide-water, the mechanism for the formation of the sponge-like structure proves to be a liquid-liquid phase separation with nucleation and growth of the
