کنسانتره پروتین آب پنیر (WPC) در چهار سطح، جانشین پودر شیر پس چرخ (SMP) در تولید شیر بازسازی شده گردید و از دو آغازگر راپی و یک آغازگر غیر راپی برای تولید دوغ استفاده شد. با افزایش مقدار WPC مقدار تنش تسلیم دوغ افزایش یافت.
