A single-MYB transcription factor GmMYB331 regulates seed oil accumulation and seed size/weight in soybean. [PDF]

open access: yesJ Integr Plant Biol
The soybean transcription factor GmMYB331 regulates oil content and seed size. Moderate expression of GmMYB331 significantly enhanced seed oil accumulation, and strong expression promoted increased seed size. This research provides a genetic resource and theoretical foundation for high‐yield and quality breeding in soybean.

Characteristics of the Beef Cheek Meat‐Based Sausage Added with Snakehead (Channa striata) Gelatin

open access: yesInternational Journal of Food Science, Volume 2023, Issue 1, 2023., 2023
This study is aimed at determining the functional effect of snakehead fish gelatin as a binder on the characteristics and shelf life of beef cheek‐based emulsion sausage compared with bovine commercial gelatin. The level of snakehead fish gelatin used was 0%, 1%, 2%, and 3%, while that of bovine commercial gelatin was 2% with a storage time of 0 to 28 ...

Composition and process approaches that underpin the mechanical properties of oleogels

open access: yesJournal of the American Oil Chemists' Society, Volume 99, Issue 11, Page 971-984, November 2022., 2022
Abstract Consumers are becoming aware of the relevance of eating low levels of trans and saturated fats in processed foods. In addition, many countries are adopting regulatory measures on the use of these ingredients. For this reason, the exploration of new technologies capable of producing structures that trap liquid oil (composed mainly of ...

A comparative study of in vitro gastrointestinal digestion of three strategic edible oils

open access: yesJournal of Food Science, Volume 87, Issue 7, Page 3268-3278, July 2022., 2022
Abstract Three strategic edible oils, that is, olive oil, microalgae oil, and shea butter, with a significantly different composition of fatty acids (FA), have been studied in a static in vitro digestion model to evaluate the rate of hydrolysis, bioaccessibility, and micellar phases formed in the process.

A reevaluation of the role of the ASIL trihelix transcription factors as repressors of the seed maturation program

open access: yesPlant Direct, Volume 5, Issue 10, October 2021., 2021
Abstract Developmental transitions are typically tightly controlled at the transcriptional level. Two of these transitions involve the induction of the embryo maturation program midway through seed development and its repression during the vegetative phase of plant growth.

Spray drying of emulsions: Influence of the emulsifier system on changes in oil droplet size during the drying step

open access: yesJournal of Food Processing and Preservation, Volume 45, Issue 9, September 2021., 2021
Abstract The goal of this study was to investigate the influence of the emulsifier system on the changes in oil droplet size occurring during the drying step of spray drying of emulsions. Atomization and spray drying experiments were performed with emulsions stabilized with whey protein isolate (WPI) alone or in combination with low molecular weight ...

Behavior of concentrated emulsions prepared by acid‐hydrolyzed insoluble microalgae proteins from Chlorella protothecoides

open access: yesJournal of the Science of Food and Agriculture, Volume 101, Issue 8, Page 3348-3354, June 2021., 2021
Abstract BACKGROUND Microalgae are a promising alternative source to meet the increasing global demand for protein. The insoluble microalgae protein fraction that makes up over half of the protein composition of the biomass has shown potential to serve as a functional emulsifier after acidic hydrolysis.
