Effects of surface passivation on gliding motility assays. [PDF]
In this study, we report differences in the observed gliding speed of microtubules dependent on the choice of bovine casein used as a surface passivator. We observed differences in both speed and support of microtubules in each of the assays.

Comparative analysis on the structural features of the 5' flanking region of
κ-casein plays an essential role in the formation, stabilisation and aggregation of milk micelles. Control of κ-casein expression reflects this essential role, although an understanding of the mechanisms involved lags behind that of the other milk ...

κ-casein (κ-CN, CSN3) variants affect milk composition, processing, milk protein content and milk yield. Whether the CSN3 mutation affects the expression of its own genes, which in turn affects the casein content and milk production, is unknown.

Characterization of the Glycans of Equine κ‑Casein
To study the protein-bound glycans of equine κ-casein, equine sodium caseinate was first obtained from raw mare’s milk by acid precipitation and then fractionated by cation-exchange chromatography.

Association of casein micelle size and enzymatic curd strength and dry matter curd yield
: The aim of the present study was to explore the association between milk protein content and casein micelle size and to examine the effects of casein micelle size on enzymatic curd strength and dry matter curd yield using reduced laboratory-scale ...

Tunable mixed micellization of β-casein in the presence of κ-casein
Casein-casein interactions can be very useful for tuning structural and physical properties of mixed casein micelles for food and biotechnology applications, particularly in the dairy industry. The present work focuses on the structures of mixed micelles

The effect of milk constituents and crowding agents on amyloid fibril formation by κ-casein
When not incorporated into the casein micelle, κ-casein, a major milk protein, rapidly forms amyloid fibrils at physiological pH and temperature. In this study, the effects of milk components (calcium, lactose, lipids, and heparan sulfate) and crowding ...

The Influence of High Heat Treatment at Alkaline pH on the Physicochemical Characteristics and Isomerization of Lactose to Lactulose in Skim Milk [PDF]
The pH of the skim milk was modified, first increased from 6.5 to 7.5, then subjected to high heat treatment at 95°C for 2 min or left unheated for 1 hour. Subsequently, the pH was adjusted back to 6.5, and the samples were analyzed. The concentration of
