A review of 5-hydroxymethylfurfural (HMF) in parenteral solutions

The chemical formation, toxicity, and pharmacokinetics of 5-hydroxymethylfurfural (HMF) and certain other decomposition products found in parenteral solutions are reviewed. Heat sterilization-induced hexose decomposition to furan derivatives is promoted at low pH.

5-Hydroxymethylfurfural (5-HMF) is a cyclic aldehyde formed during non-enzymatic browning reactions. In milk, it is, on the one hand, a contaminant, on the other, a quality indicator. The objective of this study was to evaluate the content and selected factors affecting the concentration of 5-HMF in cows' milk and first infant milk.

The Formation of 5-Hydroxymethylfurfural from Hexoses

Gas chromatography has been used to demonstrate the existence of the equilibrium; fructose, during the conversion of fructose, free from glucose, into 5-hydroxymethylfurfural under conditions of acid catalysis. The relationship of this equilibrium to subsequent stages in the conversion is discussed.

5-Hydroxymethylfurfural mediated developmental toxicity in Drosophila melanogaster

5-hydroxymethylfurfural is a common byproduct in food. However, its effect on growth and development remains incompletely understood. This study investigated the developmental toxicity of 5-HMF to Drosophila larvae. The growth and development of Drosophila melanogaster fed with 5-50 mM 5-HMF was monitored, and its possible mechanism was explored.

AbstractIn Glucoselösungen mit Molenbrüchen von 0,015‐1,000 wurde die Kinetik der Bildung von 5‐Hydroxymethylfurfural im Temperaturbereich 120 bis 200 °C untersucht. Auf Grund von Vorversuchen zeigte es sich, daß zur Bestimmung des 5‐Hydroxymethylfurfurals die vom Verfasser modifizierte WINKLERsche Methode gut anwendbar ist.
