Whey protein isolate (WPI) coatings incorporated with Ziziphora clinopodioides essential oil (ZEO) were developed. The chemical characteristics of chicken filets coated with whey protein isolate (WPI) and essential oil were evaluated. The shelf life of chicken filets was extended by WPI/ZEO treatment.
