Integrated Enzyme‐ and Ultrasound‐Assisted Extraction of Fennel Seed Proteins: Process Optimization, Structure, and Functionality

This graphical abstract presents an integrated enzyme‐ (Viscozyme L) and ultrasound‐assisted extraction strategy that successfully boosts fennel seed protein yield from 61% to 93%. Following process optimization, the resulting protein isolate exhibits significantly enhanced solubility, emulsifying, foaming, and water/oil‐holding properties.

Milk Yield and Composition Curves During the Postweaning Machine‐Milking Period in Red Deer Hinds

Deer milk is a dairy product valued for its unique composition and market potential. Research into deer lactation dynamics remains limited. In this study, 4,386 test‐day records from 170 red deer (Cervus elaphus L.) hinds in New Zealand were used to model the milk yield and composition curves using random regression models based on Legendre polynomials.

Using Principal Components Analysis to Visualize Motion and Mitigate Artifacts in Dynamic Optical Coherence Tomography

We demonstrate that Principal Component Analysis (PCA) can be used in dynamic OCT to substantially reduce artifacts from strong specular reflections, isolate movement within the sample, and create thin, histology‐like images, thereby avoiding the need for complex, time‐consuming techniques used in clinical histopathology.

Dysregulation of Non‐Muscle Myosin IIA Assembly and Phosphorylation in S100A4 Null Mouse Lens

open access: yesJournal of Cellular Physiology, Volume 241, Issue 6, June 2026.
This study identifies S100A4 as a critical regulator of NMIIA assembly, phosphorylation, and actin cytoskeletal organization in the ocular lens. Loss of S100A4 disrupts lens fiber cell architecture and impairs lens transparency, revealing a previously unrecognized role for S100A4 in maintaining lens homeostasis and structural integrity.
