Bioactive compounds in insects—Composition, extraction, functionality, food applications, and safety concerns

open access: yesFood Biomacromolecules, Volume 3, Issue 3, Page 620-645, September 2026.
This review synthesizes 94 studies (2000–2025) exploring edible insects as sustainable sources of peptides, lipids, and chitin. Utilizing “green” extraction, these bioactives offer antioxidant and antimicrobial benefits for functional foods. However, addressing safety concerns like allergenicity and heavy metals through standardized frameworks remains ...

Shiso (Perilla frutescens var. crispa) Increases Subjective Pleasantness of Steamed Rice With an Enhanced Sulfur‐Odor

open access: yesFood Science &Nutrition, Volume 14, Issue 9, September 2026.
Steamed rice can develop a sulfur‐related odor that may reduce its perceived pleasantness. We investigated whether adding shiso to onion‐odor rice could improve sensory pleasantness, using FF‐2020S odor analysis and sensory evaluation with 41 female participants.
