Recent and Promising Strategies for Robust, Sustainable, and Cost‐Friendly Production of Yogurt With Superior Quality

open access: yesComprehensive Reviews in Food Science and Food Safety, Volume 25, Issue 5, September 2026.
ABSTRACT Yogurt is one of the most technologically mature fermented dairy products on the market, traditionally prepared using the two lactic acid bacteria (LAB) Streptococcus thermophilus and Lactobacillus delbrueckii subsp. bulgaricus. Global demand for yogurt continues to rise, driven by consumer interest in healthy, high‐protein diets with as few ...

Volatile Organic Compounds Emitted by Fungi Have Substantial Effects on Growth and Disease Resistance in Arabidopsis thaliana

open access: yesPlant, Cell &Environment, Volume 49, Issue 9, Page 7168-7190, September 2026.
ABSTRACT Volatile organic compounds (VOCs) emitted by certain fungi have previously been suggested to modulate plant development and their response to stresses. While some fungal species, such as Trichoderma harzianum, are known to produce VOCs, the production of VOCs in other phylogenetically divergent species, such as Mucor mucedo, was previously ...

Probiotic Stability and Antihypertensive Activity of Peptides in Aguamiel Syrup‐Fortified Milk Protein Fermented by Lacticasebacillus rhamnosus GG

open access: yeseFood, Volume 7, Issue 4, August 2026.
This study evaluates the impact of aguamiel syrup on a synbiotic fermented dairy product, focusing on antihypertensive peptide release and Lacticaseibacillus rhamnosus GG survival. While metabolic parameters remained unchanged, aguamiel syrup enhanced bioactive peptide production and antihypertensive activity (45.3%), suggesting its potential as a ...

Impact of Lactic Acid Bacteria Fermentation on the Nutritional and Sensory Quality of Arthrospira platensis Beverages

open access: yeseFood, Volume 7, Issue 4, August 2026.
To improve the consumer appeal of Arthrospira platensis, this study utilized probiotic fermentation to mitigate its strong seaweed‐like aroma. Using Lactiplantibacillus plantarum significantly boosted amino acids, introduced novel volatiles, and enhanced umami flavors.

Metabolic Flux and Growth Profiling of Megasphaera cerevisiae for Medium‐Chain Fatty Acid Synthesis

open access: yesEnvironmental Microbiology Reports, Volume 18, Issue 4, August 2026.
Characterising the metabolism of medium‐chain fatty acids in Megasphaera cerevisiae, based on genome‐scale metabolic modelling and integration with experimental data obtained from controlled bioreactor cultivations. The iterative approach aligns in silico predictions with empirical observations and a refined model was obtained.
