Elektrofermentation von Acetoin

BIOspektrum, 2018
Electrode-assisted fermentation is a new strategy in anaerobic biotechnology. It can be used for reactions in which the average oxidation state of the end product is higher than the substrate. Here we show two applications of an electrode-assisted fermentation for the anoxic production of acetoin.

GC–FID determination of tetramethylpyrazine and acetoin in vinegars and quantifying the dependence of tetramethylpyrazine on acetoin and ammonium

Food Chemistry, 2018
2,3,5,6-Tetramethylpyrazine (TMP) is an important health functional composition in vinegars, but there are controversial viewpoints about its formation mechanism and scarce relevant records on TMP content enhancement in vinegar products. In this study, a simple and accurate solvent extraction coupled with GC-FID method was developed for the ...

Mechanism of acetoin synthesis by α-carboxylase

Biochimica et Biophysica Acta, 1952
Abstract 1. 1. Highly purified preparations of α-carboxylase from wheat germ catalyze the synthesis of acetylmethylcarbinol (AMC) from pyruvate and acetaldehyde and from acetaldehyde alone. 2. 2. The AMC thus synthesized has been isolated and its identity established by conversion to diacetyl, periodate degradation, and by analysis of the ...

Pyruvic decarboxylase and acetoin formation in Athiorhodaceae

Canadian Journal of Microbiology, 1973
Studies with cell-free extracts of Rhodopseudomonas palustris strain Q showed that under anaerobic conditions pyruvate was decarboxylated with the stoichiometric formation of carbon dioxide. Other products of the reaction include acetaldehyde and acetoin (acetyl methyl carbinol), indicating the presence of pyruvic decarboxylase. A survey of purple non-

A Piezoelectric Crystal Detector for Acetoin

Analytical Letters, 1984
Abstract A piezoelectric quartz crystal coated with tetrabutyphosphoniun chloride was found to be a good detector for acetoin. The coating is sensitive in the ppb range and completely reversible. The response curve is linear over a concentration range of 8-120 ppb. The detector can be tuned to give a satisfactory response in 30 seconds.

An acetoin-regulated expression system of Bacillussubtilis

Applied Microbiology and Biotechnology, 2006
An expression system, which is based on the promoter of the acoABCL operon of Bacillus subtilis was developed and characterized. The acoABCL operon codes for the acetoin dehydrogenase complex, which is the major enzyme system responsible for the catabolism of acetoin in B. subtilis. Besides weak organic acids, the neutral overflow metabolite acetoin is

[Acetoin metabolism in animal tissues].

Ukrainskii biokhimicheskii zhurnal (1978), 1988
The acetoin-synthesizing activity has been studied in the skeletal muscles, brain, liver and spleen homogenates (numbered as the activity decreases). The acetoin-synthesizing activity drastically increases in case of the acetaldehyde excess and alcohol intoxication.
