In summary, this study aimed to investigate the antimicrobial and antioxidant activities of thyme, oregano, ginger and fennel EOs. Among tested EOs, larger inhibition zones and lower MIC values against both C. jejuni and C. coli were obtained using oregano and thyme EOs.
