The reconfiguration of producer-consumer relations within alternative strategies in the UK agro-food system: the case of farmers' markets

open access: yes
This thesis is concerned with the UK agro-food system, and in particular the emergence of 'alternative strategies' ('AS') that seek to overcome, or at least circumvent, some of the problems associated with the globalised and industrialised practices on

Expanding food applications of yeast protein by microbial fermentation: techno-functional, rheological and aroma characterization

open access: yes
Yeast protein (YP) has been touted as a sustainable alternative to animal-based proteins. However, its food applications are hindered by several techno-functional drawbacks, such as poor solubility and low apparent viscosity.

Coagulative Granular Hydrogels with an Enzyme Catalyzed Fibrin Network for Endogenous Tissue Regeneration

open access: yesAdvanced Healthcare Materials, EarlyView.
Coagulative granular hydrogels are composed of packed thrombin‐functionalized microgels that catalyze the conversion of fibrinogen into a secondary fibrin network, filling the interstitial voids. This bio‐inspired approach stabilizes the biomaterial to match the robustness of bulk hydrogels without compromising injectability, mimicking the initial ...

Targeting Post‐Irradiation Thyroid Dysfunction: Electrospun Scaffolds As A Dual‐Action Approach for Antioxidant and Immune Modulation

open access: yesAdvanced Healthcare Materials, EarlyView.
Radiation‐induced hypothyroidism follows head and neck radiotherapy due to oxidative stress and inflammation. Electrospun polycaprolactone scaffolds containing adenosine have potential to modulate thyroid repair. Scaffolds enhance thyrocyte proliferation, antioxidant enzymes glutathione peroxidase and catalase, reduce senescence and apoptosis markers ...

Aqueous Two‐Phase Bioinks for Discrete Packing and Compartmentalization of 3D Bioprinted Cells

open access: yesAdvanced Healthcare Materials, EarlyView.
Aqueous two‐phase systems (ATPS) enable the formation of biomimetic interfaces crucial for tissue engineering. However, clinical translation remains limited by the challenge of precisely controlling cellular compartmentalization. Here, we developed ATPS biomaterial inks for 3D bioprinting allowing tuneable droplet formation via NaCl modulation.

Coaxially Electrospun Myocardial dECM‐ Based Nanofibrous Scaffolds Demonstrate Enhanced Cardiomyocyte Biocompatibility

open access: yesAdvanced Healthcare Materials, EarlyView.
Our coaxial electrospinning system is capable of incorporating decellularized myocardial extracellular matrix in a core‐sheath configuration, creating nanofibrous scaffolds. These scaffolds, in turn, support the maintenance of functional cardiomyocytes adhered to the surface of these bioactive scaffolds.
