Characterization of amaranth (Amaranthus hypochondriacus L.) seed proteins
Journal of Agricultural and Food Chemistry, 1992Amaranth seed has a high nutritional value due to the balanced amino acid composition of its proteins. These were isolated by sequential extractions. The percentage concentrations of albumins, globulins, prolamins, and glutelins were 51.0, 15.9, 2.0, and 31.1, respectively, of total protein extracted, the insoluble fraction being quantitatively ...

Beetles in Amaranthus hypochondriacus L. during the Dry Season
Southwestern Entomologist, 2019Grain amaranth, Amaranthus L., is an emerging crop cultivated worldwide. One way in which resources from the amaranth crop could be exploited as an alternative to grain is to grow amaranth in the dry season, harvest only the leaves, and incorporate them into meals.

Modification of the rheological behavior of amaranth (Amaranthus hypochondriacus) dough
Journal of Cereal Science, 2010For people with celiac disease, a lifelong abdication of gluten including-products is necessary to live a life without celiac affected reactions. The production of high-quality bread from gluten free flour is not simple in comparison to gluten including flours such as those derived from wheat (Triticum spp.). The gas binding and crumb structure forming

Phytochelatins (PCs) play a vital role in the tolerance and enrichment of cadmium (Cd) in higher plants by chelating with Cd2+. The aim of this study was to perform a full-scale metabolomics analysis of metabolic responses highly correlated with PCs generation. These metabolites and metabolic pathways were expected to promote PCs generation and further

Mature Amaranthus hypochondriacus seeds contain non-processed 11S precursors
Phytochemistry, 2008Amaranth is a dicotyledonous plant whose major seed storage proteins are globulins and glutelins. An unique feature of amaranth seeds is the presence of a fraction named albumin-2, that is extractable with water only after an exhaustive extraction of globulins and albumin-1.

Amaranthus hypochondriacus and A. tricolor lectins: isolation and characterization.
The Italian journal of biochemistry, 1995Asialofetuin-linked amino activated silica was used for the affinity purification of lectins from Amaranthus hypochondriacus Linn (AHL) and A. tricolor Linn (ATL). Like a few other Amaranthus lectins, these lectins were also inhibited by N-acetyl-D-galactosamine, fetuin and asialofetuin; they agglutinated human and different animal erythrocytes.

Isolation and Heat Stability of Trypsin Inhibitors in Amaranth (Amaranthus hypochondriacus)
Journal of Food Science, 1985ABSTRACT Trypsin inhibitors were isolated from seeds of Amaranthus hypochondriacus by extraction at pH 7.5, heat treatment at 70°C for 15 min and affinity chromatography with trypsin‐Sepharose 4B.
