LC-ESI-MS/MS quantification of carnosine, anserine, and balenine in meat samples
Journal of Chromatography B: Analytical Technologies in the Biomedical and Life Sciences, 2019The histidine-containing imidazole dipeptide carnosine and its methylated analogs anserine and balenine are present at high concentrations in vertebrate tissues. Although the physiological functions of the imidazole dipeptides have not been elucidated yet, it has been suggested that they play significant biological roles in animals.

Complexes of sodium dodecyl sulfate dimer (SDS)2 with β-alanyl-3-methyl-L-histidine dipeptide (balenine) in zwitterionic and cationic forms are simulated by the quantum chemical method DFT/B97D using the 6-311++G(3d,3p) basis set. The most stable configurations of these complexes are found.

The occurrence of the dipeptide, balenine (beta-alanyl-N tau-methyl histidine), has been identified by comparative chromatography in extracts of muscles from 9 species of mammal, including man, and the chicken. The identity of the dipeptide from 6 mammalian species and chicken was confirmed by preparative isolation prior to determination of the amino ...

AbstractThe amounts of anserine (β‐alanyl‐L‐1‐methylhistidine), carnosine (β‐alanyl‐L‐histidine) and ophidine (β‐alanyl‐L‐3‐methylhistidine) were determined in various muscles and other tissues of pigs. The amount of the histidine dipeptides varied with age and muscle type.

Imidazole dipeptides (IDPs) such as carnosine (CAR), anserine (ANS), and balenine (BAL) are widely distributed in the skeletal muscle of vertebrates. Recently, several studies have revealed that CAR plays an important role in the detoxification of cytotoxic aldehydes arising from the peroxide of unsaturated fatty acids and carbohydrate metabolite ...

Opah muscle is one of the abundant biological sources of balenine (Bal), which together with carnosine (Car) and anserine (Ans), is among the most widely studied of vertebrate imidazole dipeptides. The characteristics of imidazole dipeptides have been extensively investigated.
