The Sensory, Chemical and Microbiological Quality of Sous‐Vide Cooked Sea Bass (Dicentrarchus labrax Linneaus, 1758) With Liquid Smoke Flavor

open access: yesFood Science &Nutrition, Volume 14, Issue 8, August 2026.
The processing of sea bass fillets, flavored with liquid smoke‐salt‐vegetable oil, using sous‐vide technology is an innovative method that both enhances organoleptic quality and ensures safe preservation. The fillets, which were flavored and vacuum‐sealed, were cooked at different temperatures and then transferred to cold storage following rapid ...

The Influence of Applied Voltage on Drying Kinetics, Quality, and Mathematical Modeling of Ginger During Electrohydrodynamic (EHD) Drying

open access: yesFood Science &Nutrition, Volume 14, Issue 8, August 2026.
The graphical abstract systematically outlines the experimental design and major findings of this study. On the left is the conventional natural air‐drying method used as the control group; the middle section illustrates the Electrohydrodynamic (EHD) drying process under voltage gradients of 13, 17, and 21 kV, followed by four analytical dimensions ...

Harvest Stage‐Dependent Variation in Essential Oil Chemotype and Agronomic Yield of Parsley (Petroselinum crispum (Mill.) Fuss)

open access: yesFood Science &Nutrition, Volume 14, Issue 8, August 2026.
Parsley (Petroselinum crispum) was harvested at four ontogenetic stages (Pet‐1 to Pet‐4; May–September) under Mediterranean field conditions. Harvest timing significantly affected both agronomic yield and essential oil (EO) composition. Biomass yield peaked at Pet‐4 (10,076 kg da−1); EO content was highest at Pet‐2 (0.70%). GC–MS identified 55 volatile

Effects of Basil Seed Gum on Physicochemical, Antioxidant, and Sensory Properties of Carrot Powder‐Enriched Pancakes

open access: yesFood Science &Nutrition, Volume 14, Issue 8, August 2026.
Graphical overview of pancake formulation incorporating carrot powder and basil seed gum and evaluation of physicochemical properties. ABSTRACT Natural hydrocolloids are increasingly used in bakery products to improve texture, stability, and functional quality. This study evaluated the effect of basil seed gum (BSG) at levels of 0, 0.1%, 0.2%, and 0.3%

Investigation of the Efficacy of Orientin in Streptozotocin‐Induced Type 1 Diabetes Model and Pancreatic Beta‐TC6 Cells

open access: yesJournal of Biochemical and Molecular Toxicology, Volume 40, Issue 8, August 2026.
Orientin, a natural flavonoid, protects against streptozotocin‐induced pancreatic β‐cell damage by suppressing NF‐κB–mediated inflammation, restoring antioxidant defense (SOD, CAT, GSH), and inhibiting apoptotic (Bax/Bcl‐2, Caspase‐3/9) and pyroptotic (Caspase‐1, IL‐1β) cell death pathways in both an in vivo type 1 diabetes mouse model and Beta‐TC6 ...

Desire to Weigh Less and Unhealthy Weight Control Behaviors Among U.S. Adults: Evidence From NHANES 2017–2018

open access: yesObesity Science &Practice, Volume 12, Issue 4, August 2026.
ABSTRACT Background With obesity rates remaining high in the United States, many individuals attempt weight loss using self‐directed approaches that may not align with clinical recommendations. Objective This secondary data analysis examines the association between a desire to weigh less and unhealthy weight control behaviors among American adults ...
