Characterization of beeswax-based oleofoam and its application in the fabrication of a novel aerated model chocolate

This study aimed to evaluate the oleofoam properties produced from grape seed oil with beeswax at different concentrations (0, 2, 4, and 6% wt.). The addition of beeswax to the oleofoam reduced the average bubble size while increasing its thickness.
