Does beta-carotene prevent cancer? A critical appraisal [PDF]

open access: yesNutrition Research, 1988
The possible role of beta-carotene as a protective nutrient against cancer is reviewed. Human prospective and retrospective studies strongly indicate that beta-carotene protects against lung cancer and probably against stomach cancer.

Thermal stereoisomerization of all-(E)-.BETA.-carotene: (Z)-.BETA.-carotenes and electrocyclized .BETA.-carotenes.

open access: yesJournal of Nutritional Science and Vitaminology, 1983
Thermal isomerization of synthetic all-(E)-beta-carotene yielded a multi-component mixture composed of more than sixteen (Z)-beta-carotenes and two thermo-cyclized isomers. They were separated and purified by high-performance liquid chromatography. Ten of these were characterized by spectroscopic methods as four mono-(Z)-, five di-(Z)-, and one tri-(Z)-

Lifestyle characteristics and dietary impact on plasma concentrations of beta-carotene and retinol [PDF]

open access: yesBioDiscovery, 2012
Mechanisms of dietary micronutrients and personal characteristics of the human body are intricately complicated. These mechanisms, however, can be easily interpreted through appropriate mathematical relationships.
