Protein content of honey from different botanical origins

It is considered that the protein content in different types of honey can be related to the type of pollen, and thus to the botanical origin of the honey. During this research, using the Kjeldahl method, total protein content was determined in 54 honey samples of different botanical origins from the 2022 season.
