AbstractBACKGROUND: Broccoli (Brassicaceae) is a rich source of phytochemicals (glucosinolates and phenolic compounds) and micronutrients (vitamins and minerals). Germinated broccoli sprouts contain much higher levels (10–100 times) of aliphatic (glucoraphanin) and indolic glucosinolates than the inflorescences.
