Triacylglycerol composition of buffalo milk fat
Journal of Dairy Research, 1982SUMMARYBuffalo milk fat was first separated by thin layer chromatography (t.l.c.) into high (HMT), medium (MMT) and low (LMT) molecular weight triacylglycerols. The triacylglycerol (TG) fractions thus obtained were further resolved by argentation t.l.c. into saturated,trans-monoene,cis-monoene, diene and polyene TG species.

The Nutrition of Buffalo Milk: A Comparison with Cow Milk
Advanced Materials Research, 2013Milk is the essential source of nutrition for young mammals before they are able to digest other types of food. To explore the complex nutritive value of buffalo milk, the general composition, buffer capacity, the properties of buffalo yogurt were analyzed, meanwhile, cow milk as a control group was also studied.

Detection of cow milk admixture to buffalo milk
Journal of the American Oil Chemists' Society, 1984AbstractA method has been devised that gives the distribution of various fatty acids of pure and adulterated buffalo milk with cow milk. Gas chromatography (GC) was used for the qualitative and quantitative determination of fatty acids of authentic buffalo milk, cow milk and buffalo milk adulterated with cow milk.

Detection of cow's milk admixture to buffalo's milk
Fette, Seifen, Anstrichmittel, 1986AbstractGas chromatography was used for the qualitative and quantitative determination of fatty acids of authentic buffalo's milk, cow's milk and buffalo's milk adulterated with cow's milk. The milk fat was separated by fractional crystallization at −20°C into two distinct fractions, i. e., semi‐solid and mother liquor.

Plasmin activity in buffalo milk
Food Chemistry, 1991Abstract The proteolytic activity of the indigenous proteinase, plasmin, in buffalo milk and casein was examined under different conditions, e.g. pH, NaCl, lysine or 6-aminohexanoic acid and heat treatments. The plasmin activity, which was primarily associated with the casein fraction, showed large variations between different types of casein ...

Buffaloes have higher milking temperament scores than crossbred cows and therefore pose problems for proper milk let-down and efficient milk removal specially in machine milking. Their alveolar fraction of milk is relatively higher and cisternal fraction of milk is lower.
