ABSTRACT Diets based predominantly on refined cereal staples are associated with inadequate intake of high‐quality protein and essential micronutrients. This study evaluated five underutilized South African indigenous seed flours, Lowveld chestnut (Sterculia murex), marula (Sclerocarya birrea), forest mahogany (Trichilia dregeana), Natal mahogany ...

Mechanism of Antifungal Action of Citrinin
The mycotoxin citrinin had antifungal activity under acidic conditions. At the minimum inhibitory concentration, it completely inhibited cellular respiration and partially inhibited the incorporation of radioactive precursors into macromolecules in Saccharomyces cerevisiae. It had no effect on cell permeability.

Co‐Detoxification of Multiple Mycotoxins: Microbial and Enzymatic Biodegradation Processes
The presence of mycotoxins poses a threat to food safety. This article reviews microbial/enzymatic detoxification technologies and the main degradation pathways of key mycotoxins. We propose to overcome current bottlenecks through enzyme engineering and synthetic biology, providing a roadmap for sustainable and scalable solutions.

Study on method of detection and optiminzation of extracted conditions for citrinin in sufu
Extracted conditions for citrinin were optimized in sufu. Citrinin was extracted completely by toluene-ethyl acetate-formic acid(7∶3∶1, V/V) at 50 ℃, with 10 min ultrasonic processing.

Food Safety and Nutritional Aspects of Plant‐Based Dairy and Meat Alternatives: A Review
Plant‐based dairy and meat alternatives (PBDA and PBMA) offer sustainability benefits but also introduce chemical and microbiological hazards to the diet. Key concerns include emerging mycotoxins, heavy metals, process contaminants, and heat‐resistant spore‐forming bacteria.
