Physicochemical and structural characteristics of cross‐linked banana starch using three cross‐linking reagents

AbstractBanana starch was cross‐linked using different cross‐linking reagents, phosphoryl chloride (POCl3), sodium trimetaphosphate (STMP), and epichlorohydrin (ECH), under alkaline conditions. The reaction conditions were selected to produce similar pasting profiles.

Accessibility and cross-linking of native neurofilaments to chemical reagents

Native neurofilaments were submitted to cross-linking reactions with bifunctional reagents (DMA, DMS and DSS) and to chemical reactions with sterically bulky reagents such as EEDQ and DTAF , as well as a glutaraldehyde-activated gel. The 160K and 70K neurofilament proteins reacted slightly more than the 210K neurofilament protein with DMS and DSS.

Structural effects of cross-linking reagents on triple-helix reformation of intramolecularly cross-linked collagen

Intramolecular cross-links were introduced into collagen molecules with six kinds of cross-linking reagents at a dilute concentration of protein where intermolecular cross-links rarely occurred. Cross-linked collagen molecules regenerated the triple-helical structure from the heat-denatured conformation.

AbstractCommercial baker's yeast invertase concentrate, used in the manufacture of a variety of confectionary products, was treated with various chemical cross‐linking agents in an attempt to improve its thermal stability to that of the more useful invertase from Candida utilis, which has been shown previously to have high thermal stability.
